What are some good full moon songs, or even just moon songs
in general?

Three that come to mind are:

Neil Young --- Harvest Moon
Colleen Eccleston --- Howling
Pink Floyd --- Brain Damage

For the last one note that at new moon we are all
on the dark side of the moon since the dark side
of the moon is facing the earth then.

thought of as 'good'... but what about 'Blue Moon of Kentucky'?

I studied astronomy so long ago that they were teaching about how the moon
did not revolve on its own axis and earth always faced the same side.

Well, the same side of the moon always faces the Earth
but that side is sometimes dark (during new moon).
